      Tasting Notes and Description
      The Furstentum vineyard has nearly 30 hectares of vines facing due south, most of which are steep and at the relatively high altitude, 350 to 400 metres. Here the microclimate welcomes Mediterranean plants.
      The terroir is marl, chalk and sandstone, which filters the water, while the subsoil is largely formed of chalk of the Dogger period.
      It is an ideal terroir for Gewurztraminer and Pinot Gris, which are subtle and ethereal like fruit confits and honey.

      "The 2015 Grand Cru Furstentum Pinot Gris is clear and discreet yet deep and, in a subtle ways, intense on the nose that intermingles iodine notes with ripe and elegant seed fruit aromas. Fresh and lively on the palate, this is a round and juicy Pinot Gris with an uplifting savoriness and salinity on the finely grippy and persistent finish. Grapefruit bitters on the aftertaste. 14% stated alcohol. Natural cork. Tasted in February 2023."

      "A flinty stony glint precedes the more familiar fresh pear notes on the nose which are tempered with a fine sense of zestiness. The palate goes into full smoothness mode, with beautifully rich pear notes that find their equal in the zesty lemony countering freshness. Alcoholic heat also enters the equation but these elements interact with poise and balance. This is powerful, rounded, but also fresh. The finish is just off dry and long. Drink 2028–2030."

      Jean-Christophe Bott is heir to the family tradition dating back to 1795, when his ancestor, Jean-Martin Geyl tended his vines and made his wine. Jean-Christophe Bott has been responsible for Domaine Bott-Geyl since 1993 and he converted the vineyards to be organic in 2000 and then biodynamic in 2002.

      In the vineyards he concentrates on low yields and in the cellars he oversees the vinification in the most natural and minimalist manner. The whole art is to bring together tradition and modernity, to perpetuate the vignoble for posterity and to protect its ecology.
